Florent, the son of a butcher and cattle farmer, graduated from the Chamber of Trades in Avignon, France, before going to work in the family butchery business. After the business was sold, Florent moved to Québec. In 2011 he bought his own butchery, Boucherie Marcel Labrie, now Florent & Fils.
